I wanted to share an easy recipe that I have passed along to my friends. You see, I am definitely not a cook – ask anyone that has stepped into my kitchen! Oh, I could tell you some pretty funny cooking stories, but we will skip those for today. Instead, I wanted to share a delicious and easy recipe that takes under 5 minutes of prep time, is completely gluten-free/paleo, and will leave you with tons of energy to kick start your day! Gluten-Free Paleo Crepes || Makes 5 small crepes
- 1 ripe banana
- 2 eggs
- 1 tbs coconut oil
Fillings:
- 1 tsp cinnamon
- handful of fruit
- almond butter
Mix the eggs and bananas on low until smooth. Coat the bottom of a frying pan with coconut oil. Pour a thin layer of the batter onto the pan. When the bottom side begins to golden, place your fillings onto one side of the crepe. Then fold the side of the crepe without the fillings, on top of the other side. Flip again to ensure the inside is cooked and not gooey. Viola!
